And you know, no matter what’s bubbling away in the pot, there’s one simple, swift side dish which always hits the spot – good ol’ homemade coleslaw!
Now, you may be thinking, coleslaw? Isn’t that just a tub of bland white stuff from the supermarket? Well, hold your horses! You ain’t seen nothin’ yet. A properly made coleslaw can be a brilliant medley of crunch, sweetness, and tang; a true party in your mouth!
We’re talking cabbage, carrots, and onions, all shredded finely and mixed together in a creamy, ridiculously easy-to-make dressing. I always start by washing my cabbage under cool running water. Then, I’ll slap that puppy on the chopping board, slice it thin—thin enough that it barely knows it’s been cut. I’ll do the same with the carrots and onions, tossing them all into a bowl.
At this point, my taste buds are about to jump out of my mouth! Toss in a few dollops of mayo, squirts of lemon juice, and sprinkling of salt and pepper—voila, you’ve got yourself a coleslaw dressing. A swift stir, and bingo! You’re ready to impress your friends with a fresh, crunchy coleslaw.

Let’s Make It!
- Gather your ingredients: 1 medium-sized cabbage (washed), 2 medium-sized carrots (washed and peeled), 1 medium-sized onion (peeled), 1/2 cup of mayonnaise, 1 tablespoon of lemon juice, and salt & pepper to taste.
- Place the cabbage on a chopping board, and using a sharp knife, slice it as thinly as you can.
- Do the same with the carrots and the onion.
- Take a large bowl, add the shredded cabbage, carrots and onion into the bowl. Give them a good toss to ensure they’re well mixed.
- Now, let’s make the dressing. In a smaller bowl, start by adding your mayonnaise.
- Add in your lemon juice to give it a zing!
- Sprinkle in the salt and pepper. Don’t be shy, season according to your taste. However, remember you can always add more so it’s best to start off with a little and adjust as needed.
- Stir your dressing ingredients until they are well combined.
- Pour this creamy dressing over your shredded veggies.
- Using a salad spoon or your hands (clean ones of course!), toss everything until all the veggies are coated with the dressing.
- Et voila! Your coleslaw is ready. You can serve it immediately if you prefer, or stick it in the fridge for about an hour before serving, as this will allow flavors to marry and develop. Enjoy!
