  • Gather ingredients: 2 assorted bell peppers, 1 red onion, 6 brown mushrooms, 2 zucchinis, 1 cup of shredded cheddar cheese, 4 large flour tortillas, salt and pepper to taste, olive oil.
  • Pre-heat the grill over medium heat.
  • Wash and slice all the veggies into thin strips.
  • Toss veggies with a drizzle of olive oil, season with salt and pepper.
  • Place veggies on the pre-heated grill, grill until they’re lightly charred and softened.
  • Remove veggies from the grill, set them aside.
  • Take a tortilla, sprinkle a layer of cheese on one half.
  • Arrange a handful of grilled veggies over the cheese.
  • Sprinkle another layer of cheese on the veggies, fold over the tortilla.
  • Repeat with the remaining tortillas.
  • Place filled tortillas onto the grill, cook until cheese is melted and tortillas are lightly browned.
  • Carefully flip the tortillas, grill another 2-3 minutes.
  • Remove tortillas from the grill, allow them to cool slightly.
  • Cut each quesadilla into wedges before serving.
